I made the easiest dinner for my family of 14 – it got me out of a cooking rut and is also quick to make

A mum-of-12 has revealed the simple pasta dish that got her out of her cooking rut – and it’s quick to make too.

Zoe Sullivan, 45, husband Ben, 49, and their twelve children make up one of Scotland’s largest families.

The couple are parents to Elisabeth, 19, Olivia, 17, Noah, 14, Evangeline, 12, Tobias, 11, Agnes, six, Joseph, five, Florence, two, and two sets of twins – Charlotte and Isabelle, 16, and Leah and Erin, eight.

The brood live in a six-bedroom house in Burghead, Moray, where they regularly document their busy lives on your YouTube channel.

In a recent post, Zoe revealed that she was bored with the meals she served her children.

She said, “You know how it is, you have your spaghetti bolognese, you have your chili, you have all the things you like to cook

“But every now and then you think ‘oh, try it [something new]’.

“We all get stuck in this rut, don’t we, of cooking the same meals because it’s easy, because you know how to do it, because you know people like them, but sometimes it’s good to try different things.”

So she decided to branch out and try something a little different, a quick and unique minced dough.

And as with most things in her life, Zoe had to prepare two huge portions of the dish to ensure there was enough for her family, who tend to eat at different times.

Zoe started by browning the minced meat and chopped onion before adding garlic, herbs, pepper flakes, tomato puree and chopped tomatoes.

She then stirred in some beef broth and added an unlikely ingredient to make it creamy, milk.

“I’ve actually never done something where you add milk like that,” she admitted.

“So it’s new to me.”

Finally, the supermummy added dry pasta to the pan, boiled it, and then cooked it before adding the cheese.

From there it was ready in 20 minutes and served with garlic bread.

Zoe said: “I didn’t really know what it would be like, to be honest, but it’s really, really good.”

And social media users are already desperate to try it for themselves.

“I loved it, this recipe looks really good,” said one.

A second wrote: “It looked delightful you and Isabelle worked really well together, well done.”

“This dish looks amazing,” said a third.

A fourth added: “This looks delicious, I’m going to try this with my daughter today.”

Zoe’s One-Pot Pasta

Recipe for 6 people:

  • 750g of ground beef
  • 1-2 onions
  • 4 crushed garlic cloves
  • 1 1/2 tablespoons Italian herbs
  • 1/2 teaspoon pepper flakes
  • 1 1/2 tablespoons tomato puree
  • 600g chopped tomato
  • 600ml meat broth
  • 1 1/2 cups of milk
  • 3 cups of pasta
  • Grated cheese to finish

A fifth added: “Wow Sullivan family, another great meal. I love watching you prepare your recipes.

“I can’t imagine how you can do that in what looks like a tiny kitchen.”

Meanwhile, a sixth said: “Zoe, that looks lovely, I’ll try that.”

We’ve previously told you how Zoe only sleeps four hours a night – but we’d still never say never to baby number 13.

The supermummy gets up every morning at 4:45 am, after just settling down the night before around midnight.

She said: “I can’t stand being late for anything and I can’t stand being rushed.

“So if I wake up early, I can take a shower, think about what I’m going to do for the day and get ready.

“I also like to do some chores before the kids go to school, so I can wash twice and that kind of thing.

“I don’t go to bed until around midnight, so I probably average four or five hours of sleep – on a good night.”

But she still “would never say no” to having another child, and added: “I think the more we had, the more we realized how much we loved having a big family.

“And to be honest, the more you have, the easier it gets, in a weird way.”
